It’s fun to keep up on the latest and greatest health food hacks! If you like to stay in the know on the latest trends, you know that the superfood list is always growing. Now we know which foods can provide extensive vitamins, help eyesight, boost metabolism, and so on. However, it can be a little tricky finding out how to prepare jicama or quinoa if you’ve never had it before.

Luckily, there are every day, ordinary foods that are being added to the list of superfoods for a super you.

EGGPLANT

Eggplant is an up-and-comer on the superfood list. This purple beauty is a staple in many cuisines and for good reason. Eggplant is not only low in calories and sodium, but has an abundance of dietary fiber, potassium, B vitamins, and more. If you aren’t sold on eggplant already – it also supports heart health, cholesterol, and fights against diseases like cancer.
